Tabbouleh was one of our most hated dishes when we were young, only maybe next to bamia. People talk as if it is rocket science. As if it is fine Royal Palace French Cuisine created in Versaille* . All it is soaked tsavar, chopped onions, tons and tons of chopped parsley, salt lemon juice, olive oil, maybe diced tomatoes…and…what…? It is a poor man’s hors d’euvres/ mezze/anti-pasto/նախա.-խմոր/ pre-dinner/նախ- ընթրիք. No caviar, no prosciuto (pork/ham), no truffles, no stuffed mushrooms, not even plain old hot dogs. If we only knew the origin of the word we would not be so “confused”. “tabbouleh“ is an Arabic word, along with “muttabal” that means CONFUSED. It takes a lot of hand and my mother and I make this during holiday times. It takes a lot of time; but since we are not lazy Armenian women we make it and it's the best Armenian hors-deouvres. Even if it may sound furkish "top/գնդակ/ball", Topik is Armenian, you silly woman. It may be one of the very few dishes made and named by Armenians. It is the national dish of Bolsetsi Armenians. I don't know thw recipe but Bolstsis would die if they did not have Topik at a holiday dinner. And, while we're at it. How about you describe it and give us the recipe.? OK.
