Kristos Hariav Ee Merelots

I made kookoo last night ... it's a persian easter thing :)

 

Ingredients: (4 servings)

vegetables (parsley, dill, coriander, lettuce, spring onion ends), 1 kg

eggs, 4 large

baking soda, one teaspoon

wheat flour, one spoon

cooking oil

salt

black pepper

 

Directions:

Wash vegetables and rinse thoroughly. Chop finely and fry in oil for about 5 minutes. Let cool completely.

 

Beat eggs well, then add baking soda, salt, black pepper, flour, barberry and walnuts. Add vegetables and mix well.

 

Heat oil in a non-stick pan until it is hot. Pour in the mix, flatten the surface with the back of a spoon, and place the lid on. Reduce heat and fry for about 10 minutes, until kookoo is cooked under. Cut radially into 4 equal pieces, turn over, and fry for another 10 minutes.

Kakachik, it is really easy to make! Just find any sorts of greens you can and thow them in a pan with some eggs :) Actually, a lot of the Armenian and Iranian stores sell the greens all ready made and dried in a bag. If you don't have such a store closeby, you can also get it online.

 

For example, here is the dried vegies and herbs and here's the recipe from sadaf.

Man, I had a great Easter. I hope everyone else did too.

I had a wonderful Easter too!!!!

 

We had a large size Turkey, roasted leg of lamb with small potatoes and veggies, "pori pilav" with "shakanag" and hazelnuts. Xadayif and etc, etc, etc, :)

 

I had a good time with my family also!

 

I went to Church and I sang my Sourp and Miayn Sourp, then I went to Church again and I sang again in the Choir for merelots today, and I did my duty.

 

Gams dear; if you want my mother's "pori pilav" recepe, let me know.
