I will write more formal recipes later but these were the dishes we served at a dinner last night

2 deserts and 10 appetizers and 2 full days of preparation... :) We had prepared about 2 of each item for each person. it was very tedious work, but turned out to be lots of fun...

 

Deserts

1. Merengue with whipped cream and topped with a berry

2. Diced fruit server in a ladle with a dash of cognac. server last second with powder sugar. Too bad I did not take a pic with the powder sugar on top as it looked great

 

appetizers.

1. roasted tomato soup server in small demitasse cups with a small cracker on top

2. filo cups filled with smoked salmon, sour cream, chives and skinner lemon wedge

3. cracker topped with mashed red beans, walnuts, and topped with fanned pickle

4. celery slices topped with creamy stilton cheese and walnut

5. puff pastry filled with diced mushroom and celery.

6. Belgian endives filled with pickled mushroom and olives. topper by diced strawberries and persimmon

7. feta cubes topped with grapes

8. cherry tomatoes filled with cheese

9 chicken nuggets dipped in parmesan and fried. served with yogurt garlic sauce

10. string cheese, lettuce, salami and prosciutto lavash wrap

Very nice Azat!

 

Two days ago I missed the link with the pictures (did you have the link posted there all this time?) and couldn't visualize all the tasty things you'd written. But now, it looks simply delicious! From where do you get the inspiration from?

No Anushik jan, the link was always there. it is my only outlet left. I work insane hours this past few weeks and cooking is the only way I relax.(I am still at work, and in fact am basically leaving over 2K on the table and canceling a vacation to Rio over work :()

 

The cooking for that was done my me and my cousin over a 2 day period. It was great fun. I am actually looking forward to more of that kind of small gatherings as they are fun and bring up lots of conversation around the food

Azat, everything looks great. Your presentation is precisely the reason the food looks so appealing. I like the combination of differing tastes you combined. Please don't be so modest. :)

 

While I do not derive as much pleasure from the process of cooking, I nonetheless feel very fullfilled from feeding others and playing hostess. :)

 

I miss having small, intimate dinner parties as well... lately, we get together but it is not fun at all bceause there are just too many people around... cannot really connect and enjoy each others company.

AZATYUSHKIN WHERE IS THE LINK????!!!! I want the link, I want to see your creations! Azat, you are so darn lucky that you can cook like that. I would feel so darn good about myself if I knew how to cook ala Azat!

 

There is nothing better then a dinner party with tapas, they are so much more fun then a 3 course meal. Have you ever seen "Babbette's Feast"? Awesome movie specifically for the cooking glory, your mouth will be watering by the end of the film.

 

Couple of questions:

 

-What's a fanned pickle?

-How do you fill cherry tomatoes with cheese (they are so tiny!)

-How do I make the salmon pastry?

-What do you do with an endive, just serve it raw?

-Nuggets dipped in parmesan...do you melt the cheese and then just dip and fry or does it involve other steps?

-do you just top feta with a grape, secured by a toothpick?

- Lavash wrap sounds excellent, I would have never thought! Do you add mustard or any sauces or just au natural?

Thanks Ashot! That's the idea, give the recpie away and invite us over! Please...Vava and I can be little helpers around the kitchen. Well actually vava and Azatyushkin can have an Iron chef tournament and I'll be the judge. I will have the best part! :clap:

I'm in :)

But I'm not as good (or as ambitious) as Azat jan. There must be some sort of handicap I could be awarded for the "competition", yes? I don't make dessert though. Actually, screw the competition - cooking and eating is good enough for me. :drool:

Before the Iron Chef competition we should have the "Who's more modest competition?." I am not sure which one will be more challenging.

 

We can come up with questions related to all the things that vava and Azat can do superbly well, and see which one of you appears to be more modest in denying most vigorously your great skills and achievements. It's sounds like a grand event! Forget about popcorn, I am bringing oysters and champagne for that one.

let me first be the one to throw in the towel. While I have not had food that Vava has ever cooked, it would be a very good guess that he would kick my butt. I think I know him enough to guess that he is an exceptional cook...

Since I got home so early today, 9PM :) let me try to write some of the recipes.

 

Deserts

>>1. Merengue with whipped cream and topped with a berry

Prepare a traditional merengue with whipped egg whites and sugar. make small portions(size of lady fingers). cook til light brown. Add dash of cream on top and top it with a small berry

 

>>2. Diced fruit server in a ladle with a dash of cognac. server last second with powder sugar. Too bad I did not take a pic with the powder sugar on top as it looked great

Pretty self explanatory

 

 

appetizers.

>>1. roasted tomato soup server in small demitasse cups with a small cracker on top

Roast garlic, cut tomatoes, olive oil, basil and oregano in a pan in the over. use a food processor. add salt pepper and cream. bring it to a boil

 

>>2. filo cups filled with smoked salmon, sour cream, chives and skinner lemon wedge

4 layers of filo baked in the oven inside the small cup cake aluminum cups. Add the sour cream to the bottom. top it with the salmon, and chives. I also added lemon wedges. I skinned the lemon wedges prior to adding them

 

>>3. cracker topped with mashed red beans, walnuts, and topped with fanned pickle

pretty self explanatory as well. Fanned pickle for decoration. its the small pickles. if you slice the thin pickle into 5-6 slices with a very sharp knife. Just make sure to not cut all the way to the end.

 

>>4. celery slices topped with creamy stilton cheese and walnut

self explanatory

 

>>5. puff pastry filled with diced mushroom and celery.

self explanatory

 

>>6. Belgian endives filled with pickled mushroom and olives. topper by diced strawberries and persimmon

self explanatory. the endive is not cooked. just used as a "platter" for the appetizer

 

>>7. feta cubes topped with grapes

self explanatory. yes the tooth pick is used to put the dish together

 

>>8. cherry tomatoes filled with cheese

You need a sharp knife and gentle hands as its a pain to make sure you dont take off the skin when scraping the inside

 

>>9 chicken nuggets dipped in parmesan and fried. served with yogurt garlic sauce

Grind the parmesan cheese and mix it with the bread crumbs. dip the chicken in the wash and then the mixture. fry. serve it with yogurt sauce

 

>>10. string cheese, lettuce, salami and prosciutto lavash wrap

pretty self explanatory
