Right now I am studying about enzymes which are responsible of turning the milk into cheese.

Streptococci, lactobacilli and rennet is added to the milk to make cheese the rennet is taken from the forth stomach of the animal which the milk is derived.

If you are lactose intolerant (I am) then need not to worry you can eat cheese safely since these enzymes convert lactose to lactic acid.

In short cheese is predigested form of food since much of the work is done by the healthy bacteria.

If you can find try to eat raw milk cheese so as to really appreciate great cheese.

Sheep milk is the richest hence is more nutritious. Goat’s milk is closest to human milk since it has no beta-carotene therefore it is for most part very white.

And finally cow.

Some great cheeses to try.

Roaring Forties-Australia-cow

Gouda-aged at least five years. This cheese will knock your sucks off.

Camembert-Normandy-cow

Roquefort-France the king of cheese 100% sheep

Ossau-Iratry-France-sheep

Mistura mix of sheep and goat-portugal

Humboldt Fog-cypress Grove, A-aged goat(yes you can age goat)

Vacherin Mont d’Or-raw milk France $35-50 lb.amazing cheese.

Epoisse de Bourgogne-France-Napaleon’s favorite.

Dan ,other dairy products are broken down by enzymes such as yogurt,cottage cheese, cream cheese.If you can't drink milk then you are lactose intolarant like me.The enzymes convert the lactose to lactic acid in cheese hence it is safe and easy to digest.

oh, a question i've always wanted to ask but never thought about looking it up myself -- i wasn't lactose intolerant until very recently... how is that possible??!?! how does one develop lactose intolerance overnight? lol :blink:

sad to say-- i love cheese but usually cant eat it because im allergic to milk and other products containing it--i sometimes eat it but when i do i get hives and become really sick----so i rarely eat cheese, no butter, never drink milk, cant eat yogurt/sour cream....but come on who can resist ice cream...? but usually i dont eat it if it has any milk products--not that im lactose intolerant-but im actualy alergic to anything with milk....so i try to get my calcium out of soymilk-but i think im also allergic to that too-recently....oh well cant do anything about it....
