Well I disagree with Movses and Costco. Dont get the regular Henckel knives get either the pro, the four star or the five star. And no need for a set, you can buy 3 knives and a sharpener and be fine for MANY years.

You for sure need a 6-8 inch Chefs knife(I have the 8):

http://www.kitchen-universe.com/detail.aspx?ID=1447

you need the 4-in. paring knife

http://www.kitchen-universe.com/detail.aspx?ID=1440

and you need a 5 to 8 inch utility knife http://www.kitchen-universe.com/detail.aspx?ID=1598

and dont forget the sharpener

http://www.kitchen-universe.com/detail.aspx?ID=1710

BTW, you can get all those knives on ebay at half price.

these will last you a life time

I dont know much about pots and pans, I do have a dutch oven that I love and have couple of french pots that are awesome and I have a US made but nice wok that is awesome. but thats it

So these are the knives I decided on:

Henckels Four Star 6" Utility Knife

Henckels Four Star 4" Paring Knife

http://www.bedbathandbeyond.com/product.as...=1&sku=10156637

Henckels Four Star 10" Steel Knife Sharpener

http://www.bedbathandbeyond.com/product.as...=1&sku=10158842

Henckels Professional "S" 8" Bread Knife

http://www.bedbathandbeyond.com/product.as...=1&sku=10157080

Henckels Twin Select 7" Hollow Santoku Knife

http://www.bedbathandbeyond.com/product.as...=1&sku=13356696

Azatik, Vavachka, Mos, what do you think good choices? I think I especially like the looks of the Santoku Knife, thanks to vava for the introduction.

Now you're in my territory ;)

anything from Sur La Table will do ;)

as long as you don't mind paying an arm and a leg for your kitchen stuff.

Do you think that cookware matters all that much? And what would you recommend, I am willing to spend about $50 per pot, is it a small price tag for good quality?

Ok, I am having a hard time deciding if I should get a Santoko or Chef's. And should I bother with a bread knife or get a serrated utility knife instead?

Nice choices!

I think that a solid chef'S knife is essential. A Santuko is great - especially for fine slicing - but it is more delicate. I think you'll get more use from a chef's knife if you have to choose between the two. That said, I would never give up my Santuko :)

We eat lots of great crusty french bread here, so a good bread knife is also a must have IMO. I don't get much use out of my old utility knife (although it's not as good quality as some of the others either).

Ok, so in that case, for now I'll get the chef's knife instead. I like this one:

Also I was thinking to lower the price of the bread knife to this one:

http://www.bedbathandbeyond.com/product.as...=1&sku=10664373

So really I can't get too many, if I really had to focus on 3 or 4, which ones would they be?

Azatik, the serrated utility knife, would I use it for things that a chef's knife won't do or can a good chef knife do most of the work.

I was also thinking of a slicer or a carver, for lamb or turkey, do you think it's a good idea and can I just get this one?

As for the chef's knife I was also thinking that a 6' would be a good idea because of my small hands.

Hi there, two quick comments:

A "carving" knife should be a minimum of 10" IMO. Anything bigger than a 15lb turkey and you'll be too short with that one. Also, I don't think it's a knife you will use as often as some of the others on the list. My advice is to invest in knives you will use.

I think you'll outgrow a 6" inch chef knife quickly. If you're as passionate about food as I think you are, you'll soon wish you had something bigger. It may seem big for your hands now - once you get used to it you'll never go back. :P

vava its not the size that matters but the motion of the hands :D (ok that was dumb)

Eve I agree with our culinary master Vava. get the 8 inch.

Also i have both a carving knife and a bad knife. i hardly use the carving knife. in most cases either the utility or the chefs knife will do. the bread knife is a seraded knife and the sharpness of the blade and quality is not super important so i would say get a regular hankle bread knife(maybe 20 dollars). if you must have a carver you can get a semi cheap one of those as well. i really think the knifes you will use most(Chef, utility , etc) need to be great, all others settle for just good

going back to pots - there is for sure a huge difference in good and bad pots. get few but get good ones. i see people often but the 25 piece set. you dontneed that get the 5-7 piect good ones instead of the 20.
