By Krista Simmons 4:00 PM PDT, May 26, 2012 Within moments of stepping into Gevork Kazanchyan's Eagle Rock home, his mother Mary has placed a copper-colored jazzve of Armenian coffee on the stove. “How sweet would you like it?” she asks with a smile. A demitasse of the ultra-potent brew later, the conversation shifts to Armenian spirits. Bottles of Ijevan mulberry brandy are brought out. It's time for a tour of Gevork's pride and joy: the beer cellar. Though Kazanchyan works in risk management by day, he is 100% beer geek by night, as evidenced by his fully stocked, custom-climatized fridge packed to the gills with global craft brews. Thankfully that passion isn't lost on the populace: Since 2008, he has engineered a series of events titled Dionicess, which unites craft brewers, celebrated chefs and artisanal purveyors for an evening of gustatory delight. The series is toasting its 10th installation in June, and in honor of the occasion, Kazanchyan has tapped some of his brewing buddies to collaborate on a very personal project — a commemorative beer called System of a Stout. The name is a play on the L.A.-based Armenian rock group System of a Down. The beer will include several quintessentially Armenian ingredients, including cardamom, Armenian cognac and, of course, coffee. The idea for this regionally inspired beer was hatched at one of Kazanchyan's “inventory reduction parties,” where he and Portola Coffee Lab owner Jeff Duggan chatted over cellared beers about how they might collaborate. Duggan's coffee cred paired with his background in chemistry made him the perfect fit for a roaster. Then came the tough bit: finding a brewer. On a long shot, Kazanchyan rang up Julian Shrago, of the award-winning Beachwood BBQ & Brewing. Shrago agreed, and the rest is history in the making. Dionicess has come a long way since its humble beginnings in 2008, where when Kazanchyan paired Glendale's Mignon chocolates with boutique wines for the inaugural event. His gatherings have since evolved to focus on matching craft beer with food in a unique, unexpected way. “I look back at the time that I used to sit and taste everything with one other guy, and now I've got an Iron Chef winner [chef Eric Greenspan, Dionicess VII], an amazing world-class mixologist [Matthew Biancaniello, Dionicess IX], and a top brewer [shrago] who want to collaborate,” says Kazanchyan, who grew up on the fringes of Thai Town and Little Armenia. “It's pretty amazing.” Dionicess X's theme is appropriately named Coming of Age, and will showcase five courses (plus a few bonus rounds) of aged beers paired with dishes that feature pickled and fermented foods from around the world. Guests will get to take home commemorative bottles of the beer, as well as some of Beachwood's house-made, barrel-aged hot sauce. Of course, System of a Stout will play a central role in the meal. “I've brewed a lot of imperial stouts, but this one is 100% distinct,” says Shrago. “It was inherently wasteful to brew, but it's got a great nose, and it's immediately identifiable as being Armenian coffee.” The process of making the beer itself is unique. First comes the mash, where crushed grains of barley get mixed with hot water, similar to oatmeal. That sweet liquid is then drained into a boil kettle. That's when the blackstrap molasses, hops, cardamom and Duggan's Armenian roast come in. “We can't simulate the body produced by suspending coffee grounds in the beer because doing so would cause issues with brewing and serving the beer. What we shot for was the flavor essence of [unfiltered] Armenian coffee without the gritty mouthfeel,” Duggan says. “This objective led me to the selection of the two [direct trade Brazilian] coffees I chose to custom roast specifically for this beer.” To impart the coffee flavors into the beer, the beans were ground to a coarseness similar to that of a French press grind, and then steeped like tea into the boil. The beer was then fermented, finished and conditioned. Conditioning is where the coffee steeper is removed and swapped for Armenian-brandy-soaked oak chips. System of a Stout is currently in its last stages of brewing, and will be ready just in time for the 10th installation of Dionicess, which will take place at Beachwood on June 10 in Long Beach. Long Beach is a haul from L.A., but thankfully the 10 remaining kegs of System of a Stout will be sold at a small selection of craft beer bars in Southern California, one of which is Burbank's Tony's Darts Away. Two dollars from each pint sale will go to the Real Medicine Foundation in Armenia. When asked to speak about the success and growth of the event, Kazanchyan replies in a way that would make his mother proud. “It's very humbling and surreal that we've pulled off nine events, and each time they've kind of outdone themselves. We've really made the best of our resources and what's available. And Armenians take pride in being very resourceful, practical and innovative. On a Friday morning at the New Way Foundation rehab facility in Burbank, 20 men slowly crowd into a room. The stark white walls are covered in motivational posters. The blue door swings back and they sit down. Their offenses are varied. For some it's alcohol, for others heroin. For a few, cocaine or meth. Their backgrounds are varied too: They're Armenian, Indian, Latino, biracial and white. Some have been clean for six days, others for 80. They are open and honest and ready to tell me about how their lives were impacted by drugs. For close to an hour, we talk about life, their battles with addiction and the public's misconceptions about their struggles. “We're not worthless, deviant people,” one of them says. They are all here because they wanted to be, and New Way offered them a path to be able to feel whole and human again, to cope with and fill the voids in their lives with something other than destruction. But if you wanted to know why they used in the first place, the answer is simple: “All of us did this to be happy.” I ask if any of them faced added cultural stigma among the tight-knit new immigrant families they grew up in. They answer yes. Their addictions are kept hidden from extended relatives, out of shame. The long recovery process isn't understood by their parents. “They think it’s willpower,” someone says. “They ask, 'Why don't you just quit?” But they can't just quit, because when drugs, especially heroin, grab hold of you, letting go doesn't come easy. They tell me how potent a disease drug addiction is, about the lifelong struggles they face, but also hope to overcome. All of them look like any one and every one you know — your brother, your father, your uncle or husband. Close by, a narcotics anonymous group convenes at the Armenian Relief Center, a facility that offers assistance and treatment for drug addiction, mostly to the city's Armenian-American population. As the sun sets over the Golden State (5) Freeway, the Armenian-language meeting starts — there's talk of heroin, of alcohol, of shame and loss, but also of hope and strength. Across town on the border of La Crescenta and Tujunga, another group of men, women and teenagers — many of whom used drugs together — meet. In a wood-paneled room, with inspirational books lining the shelves and free coffee, they pray together and are bound by only one caveat: the desire to stop using. At the end of the day, all groups share the same message: how utterly vital their meetings — a concept they liken to medication — are because the process, the realization of being an addict and then having the courage to recover from the disease, is absolutely brutal. The lifelong maintenance of a craving that can be suppressed, but one that never fully goes away, requires all the help an addict can get. With her cascading dark brown hair, tattoos and brown eyes, Liz is unforgettable, and a testament to this. She's only 33, but her addiction has been a part of her life for 20 years. At 13, she started using alcohol and prescription pills. At 18, she was addicted to heroin. She felt like she was on top of the world at first, but she lost everything. She's attempted numerous suicides, endured strokes, heart attacks, a coma and bouts of domestic violence. She tried to drive her car off the Glendale (2) Freeway, but she experienced what she says was a divine intervention. Then she found out she was pregnant, but was told by doctors that stopping heroin could have meant losing her baby. “I hated God,” she said. “I wanted to die and he would not let me die. I thought, ‘Why are you doing this to me?’” Her family found out when her daughter was born, premature but healthy. She quit, but it didn't last for long. Last year, when her mom found her with a needle in her arm, she asked for help. It was the first time she had wanted to stop. Almost 10 months later, she is clean and in many ways has been reborn stronger than ever. Her mother, whose respect and loyalty she has earned, is her rock. It is perhaps one of the most difficult aspects in recovery, but for Liz, detox was a godsend. “Detox is not only getting you off from what you're on, it's mental, emotional, spiritual help,” she glowingly says. “I wear my scars with pride. Personally, I like the toli version and it makes sense and I don't like it being shot down. Unless you can PROVE with solid facts that the mentioned is complete BS I will continue viewing it as a viable interpretation.

    Since we are on the topic of food I wanted to mention that I made this "Kibbe Pie with chicken, stuffed with onion jam and nuts" a few days ago using the following recipe http://www.tasteofbeirut.com/2009/10/kibbe-pie-with-chicken-stuffed-with-onion-jam-and-nuts/ I have to say I LOVED LOVED LOVED it. My husband ate it reluctantly because it had cinnamon and allspice in the onion jam (these are flavors that belong only in sweets if you ask my hubbie). On the other hand I love all the spices that are used in the Lebanese kitchen - cinnamon, allspice, clove, cumin (the more the better), cardamom, nutmeg, fenugreek. This is a real easy recipe with wonderful results. If you love caramelized onions and nuts and spices you will love it. Otherwise, not so much.
