MosJan
Urax Zatik Bolorin... Traditional Armenian Easter Bread - Choreg/Guluria/Tsoureki/Panettone http://90pluswine.com/__oneclick_uploads/2009/04/greekeaster.thumbnail.jpgToday I will be making Choreg. Its the traditional Armenian Easter bread very similar to the Greek Tsoureki as well as the Italian Panettone except we dont put dried fruit in the bread. I have seen it be called Guluria as well. For Easter Armenians and Greeks will also put cooked and colored egg in the pastry and knit it but I like to do the easy way. the traditional bread shape. http://90pluswine.com/__oneclick_uploads/2009/04/tsoureki1lbround.thumbnail.jpg The recipe comes from my mom and she use to make it for us every single Easter. My sister and I get together and make it now since she passed away 5 years back. I went shopping for the ingredients this AM and every time I do that I keep thinking this cannot be health or taste good but it really is Very tasty. Im sure not too good for you as its so rich Here is her recipe. I will take pics tonight and add them later but for now I’m including couple of pics from another site… ChoregPreparation of the yeast1 Liter warm milk2 Packages of yeast2 Table spoons of sugarAdd flour such that the mixture has the consistency more watery of biscuit dough Leave it in a warm place for 40 minutes Dough1 Kilo sugarPinch of saltTea spoon of vanilla extract16 EggsMix all together and add on top of the sugar1.1to 1.2 Kilo of Butter(take majority out) add to the egg mixtureAdd yeast mixture3 Kilograms of flour add slowly to the mixture while mixing.Add the extra butter fistful at a time for the next 40-60 minutesLeave it overnight Prior to cooking the balls should allow to rise for 2-3 hours. Arpa
Have we spoken about Armenian Easter/Zatik Recipes, except here?http://www.thegutsygourmet.net/br-katah.htmlhttp://www.thegutsygourmet.net/armenian.htmlMaral where are you? What are you cooking for Easter? We have spoken about Christmas recipes, however poor it may be.In general the Thanksgiving and Christmas recipes are based on Hndkahav/Jolokh.http://www.persianpersia.com/images/mimage/87-1473.jpghttp://www.persianpersia.com/images/mimage/87-1473.jpghttp://boyplusgirldesign.com/wp-content/uploads/2012/12/Moms-Roast-Turkey_thumb.jpgIn the west the main Eater dish is Ham/pork.http://imgick.pennlive.com/home/penn-media//img/life/photo/12484590-small.jpghttp://imgick.pennlive.com/home/penn-media//img/life/photo/12484590-small.jpgI just saw where this lady of Italian heritage was showing how to prepare the traditional Italian Easter Pie.The recipe was eggs, half a dozen different cheeses and about 3 or 4 different hams, boiled, baked, and of course the Italian Prosciutto/ pork.http://en.wikipedia.org/wiki/ProsciuttoI was laughing all along. I could not get over the ironyWhere as Easter is always pitted against and juxtaposed with the Judaic passover. Yet the main Easter dish is ham/pork while in that other culture pork/ham/swine are a non-kosher anathema. See how disdained those noble animals were;Matt.7[6] Give not that which is holy unto the dogs, neither cast ye your pearls before swine, lest they trample them under their feet, and turn again and rend you.Matt.8[30] And there was a good way off from them an herd of many swine feeding.[31] So the devils besought him, saying, If thou cast us out, suffer us to go away into the herd of swine.[32] And he said unto them, Go. And when they were come out, they went into the herd of swine: and, behold, the whole herd of swine ran violently down a steep place into the sea, and perished in the waters.http://kendimian.com/Bible/Matthew.html
