Guest Posted December 28, 2000 Report Share Posted December 28, 2000 This is one of the few vestiges of Indian culture in my dad's family. This is also prepared by Cherokees and Seminole of Oklahoma. The Jalapenos seem to be an introduction via the Southwest Indians such as Navajo etc. Anusht Wasichu Armenians! 1. 2 cups of Maseca instant corn meal mix and 1 and 1/4 cups of water. Mix with hands(no spoon!) continuously for about 5 minutes.Add about a teaspoon of salt. 2. After mixing the corn meal, throw in chopped jalapenos and diced onions. Mix together and form patties 3. In a pan add 1/2 cup of corn oil (yes a lot, no wonder we have high cholesterol, thank you White man!) and heat, deep fry patties til golden brown and crispy on outside. 4. Cheese can be put on top, as if there isn't enough cholesterol! The key to making this is in the mixing of the corn meal with your hands. If it isn't mixed enough you will end up with a rock!
