Guest Posted December 28, 2000 Report Share Posted December 28, 2000 Here is another one of my famous recipes. Caldos are hearty Mexican soups, this one is with meatballs. 1. Take 1 lb of ground chuck and mix with oregano, diced onions, salt, pepper, and precooked rice(short grain ok!) Egg can be added, but the Mexicans usually don't include it. 2. Bring a large pot of water to boil, add meatballs, lower heat to simmer 3. As meatballs are simmering, broth with be forming, if you wish, you could add some canned beef broth 4. Add chopped carrots, zucchini, sliced potatoes, cilantro, and cut pieces of corn on the cob, cover and let simmer on a very low temperature Serve with los perricos tostadas shells, shredded red cabbage and sliced radishes.
