    ROJIK

ROJIK** and PASTEGH*** http://www.armenianow.com/sites/default/files/img/imagecache/600x400/Beatris-Balabanyan-armenian-sujukh.jpg http://www.armenianow.com/sites/default/files/img/imagecache/600x400/Beatris-Balabanyan-armenian-sujukh.jpg It is that time of the year. During our earlier days the only time we would have sweets like chir ou chamich, and an occasional candy was not so much Christmas but New Year. Our parents knew how to make Rojik**** and Pastegh. We would see candy that was reserved for the guests only during holidays. ** At Geghard, among other stands the local farmers would have a stand for local fruits and other delicacies, among which also homemade Rojik. The lady said they called it (khaghoghi) TUSHAP/TOSHAP , of course referring not so much to the end product but to the ingredient of grape syrup/paste. In the Armenian version we the word dondogh/dondoghanman.; Jelly/jellylike.. I did not know that word.Yes in fact Soukiasian says it means Jelly. ***The same dipping syrup was spread thinly on cotton sheets and dried as Pastegh.Tmember that the Armenian pastegh is the same as the Latin Pastillel (pastel/paste?). ****Sujukh is the turkified variant of the Latin Sausage. Search and see Yershik/Ershik. http://www.armenianow.com/society/features/41934/sujukh_armenian_holiday_dishes See the Armenian version for some words.
