I use to love it, but alas I haven't had it in years. BTW my instinct tells me that the chicken marinade should include saffron as well... I've tried it at some Persian restaurants & Cello Kababi's but nothing compares... I think Armenians in Iran had their own specific versions of the persian recipes. For example, the Ghormeh sabzi you get at most Persian places is really dark green - almost black - with that thick layer of oil on top. My mom's was bright green, full of herbs with big chunks of lamb (or beef) and tasted fresh, not oily. Anyway, getting back to Zereshk Polo, it should be fairly simple for an Armenian (I would modify the recipe in the link above just slightly: Marinade you chicken in lemon juice, saffron & onion (and a little salt) Make your regular basmati rice with saffron. Take the dried Zereshk, rinse, and heat in butter for a few minutes. Grill the chicken, and serve it on the rice, slightly mixed with the Zereshk & butter. MMmmm - I think i'll have that tomorrow. I bought some Jasmine rice to serve with some stir fried chicken a few days ago,and it tasted a lot like the basmati,it was just a bit softer,but that could have been from the way I prepared it. Azat can you check to see if the most recent recipes are still on-line? I couldn't find anything more recent than 2004 that can't be right....
