vava Posted October 5, 2005 Author Report Share Posted October 5, 2005 Ok - I don't know much about the restaurant empire bit, but I do know salmon. Try this: You need THICK slices salmon filet. Marinate in: - Juice of one large lemon - Olive oil - Saffron - Fresh thyme - Cracked pepper I usually mix up the marinade, place the salmon filets in a Ziploc bag with marinade (enough to cover it all) in the fridge for at least 4 hours. Grill each side of salmon filets until the inside is tender but not overcooked (by 'side', I mean the sides - not the skin side of the file or the open side - I said THICK slices) You should get beautiful grill marks on each side of the filet. Serve with a fruit & nut couscous: Make couscous, with butter. Add sauteed onions, mushrooms & sweet red pepper Mix in chopped pecans & pistachios Add a balsmic/olive oil vinaigrette - to taste. Would you explain what it is? thanks Azat Azat: Sempougi djash is: I cut the eggplant about 1/4 of an inch, salt it then leave it for about 15 min. or so then I brush veg. oil on both sides of the eggplant and I brown the eggplant, then I either do it with vegetables or with ground sirloin or ground lamb. Anyway, say I want to prepare it with vegetables, I cut the green, the dzirani kouyn and the red peppers, I cut them thin but long and also the same way the onions and the fresh garlic then with a bit of veg. oil I brown them well. then at the bottom of the pan I prepare some of the brown eggplants, I add all the vegetables or the cooked meat then I arrange the rest of the eggplants. I also prepare the sauce, then I pour over the eggplants and the vegetables, and I cook it more on 350o oven for about one hour. And voila you have a grand dish of Sempougi djash. I also prepare nice rice pilaf on the side to serve it with the eggplant. You'd love it, I assure you. Are you hungry yet? I used the sea salt in a bit of an excess and as a result it turned out to be a rather salty salmon, and I didn't have the bay leaves so I used orange juice. The whole dish came out really yummy with some sweet potatoes and sake instead of vodka. I can't really understand the difference between kosher salt, sea salt and table salt, they are all equally bad for you and taste about the same. By the way, is brown sugar better than regular sugar. And has anyone used an electric stove, is it so much more different than a gas stove? Thanks for the recipes guys, it was very interesting. Can't help you with the salt thing - I use sea salt in some recipes, but I rarely salt my food. There's already so much salt in much of what we eat. Gas stoves are preferable - I've never cooked on an electric stove 'successfully' - it always takes longer to heat up, and holds it's heat longer so your prone to over-cooking, or preparing one dish too late! With Gas the heat's instant, and you usually have a greater control over the level of heat. These days, there are electric cooktops (ceramic) which heat quite quickly.
