Almost! Getting it right - Armenian String Cheese

Some time ago I had sojukh that I was making. The ACYO was up on a skiing trip and a few of the group had come over. One young lady seeing the sojukh she asked: " may I try this?" Tasing it she said: " All most!" I made it better as time went on.

 

This is about Cheese: Armenian Cheese, Armenian String Cheese to be exact. I'm making String Cheese right now, it looks like string cheese, comes apart like our cheese, it is Almost! As the young Armenian lady said of the Sojukh..

 

We have a cow that has freshened I'd like to make it, Armen String cheese, look, smell and taste like Hayr ou Mayr use to make. 

 

Have to go to the stove it's time to slice the curd.

At last! ...........the cheese is coming our nice. Just the other day every thing came together. The curd was right, then, the forming of the curd, the draining, the cooking of the curd and the right temperature for the exact amount of time. Then the folding, streching, twisting, rinsing, submerging in correct brine, and it's very near that of the folks.

 

OK, the shape isn't 100% perfect, in time I'll get that right too God willing. It comes apart well and tastes very nice. This was a long time in coming.

Where is the black caraway seeds? The seeds give the cheese a nice taste. :)

The sev gundig is up at the mountain place, we're at the high desert now, I'll begin to add that and malab now that it's coming together.

Test cheese goes to Movses, the real ones with seeds comes to me!!!!!!!!!!! :ap:
