Anyone who does not understand the message below will be remanded to the mountains of Հայկական Լէռնաշխարհ to become a khashnarats/Խաշնարած.
smile.gif smile.gif
(Since "khash" is our Royal Food/Թագաւորական Կերակուր, our "Royal Jelly" (see jelly below), it deserves a whole subject topic of its own).

ԽԱՇԳԼՈՒԽ/KHASHGLOUKH.

Movses, are you the gloukh of the“khashgloukhs”?
Who are your lieutenants?
No! No!
We know that you are the captain of the “harissa/herisah” brigade. smile.gif
Then, who is the captain of the “khash-banak/խաշբանակ”??
Harut? Azat? Edward? Anahid?
Sip?
Forget him.
He is in outer Mongolia gorging on the “yak barbeque smile.gif
Hey Sip! Do you know that as we speak Georgy Porgy is in Ulan Bator enjoying that legendary Mongolian Barbeque? smile.gif smile.gif

Then, who is the sokh/skhtor kloukh/

Since there has been so much renewed interest about the subject I decided to give the all-Armenian national dish its own subject topic.
This subject has been discussed numerous times under a variety of subject. One may search an find many of them by simply using the keywords of “khash, xash, *****” etc.

When I say “the all-Armenian national dish” it is not without reason as the Hanragitaran has seen it fit to devote whole monograph. A rarity as since very few other recipes find their way into the encyclopedia. Also note that the dish is attributed medicinal and curative value, not unlike the “chicken soup” of another culture.
It goes;
Translation: KHASH, kerakour(food). Basically, it is cooked in the winter, the feet , the head and sometimes the essential abdominal contents of cattle, sheep or pork. It is usually eaten in the morning with lavash and garlic. Its gelatinous (* note this) property is the reason for its popular medicinal claims(a panacea, an all curative). Many a sufferers of “kotrtouk”? ** are fed khash for this reason.
*When khash is let to cool it becomes jelly-like due to the gelatinous content of the feet, totiks.
**Do they mean kotrtouk as in arthritic joint pain or fractures?
And now to the more disgustingly popular designation of “*****” or “kelle *****”known by western Armenians. One of the several synonyms of “khash” is “otnagloukh/ոտնագլուխ”. You will note that it means foot and head. In the Turkish, YES, TURKISH version it is reversed. So! What else is new? With “kelle/head” and “*****/leg” are “head over heels” smile.gif “Kelle” to mean head, skull, cranium is Turkish, no arguments there, but when we come to “*****”, we are treading in shallow waters, so to speak. We know that the Turks have a word for “leg/thigh”-”poech”, which is nothing but the turkified version of the Armenian “poch/պոչ/tail”. You be the judge. We have another word for “thigh” , “jiv” mostly used by eastern west Armenians like the Khabertsis- “JIV”. It literally means leg/foot/paw, but more often than not is used to express indignation, as in “between the legs”. So! Jiverous if the turks have stolen our all-Armenian national dish “votnaglukh/ ոտնագլուխ(foot and head)and turned it upside down to cal it “kele *****”, head and foot” . Wecalso know that they suffer from another disease, “foot and mouth“, when every time they open their mouths one can see a big foot. One of these days that big foot will choke them and shut them off forever.
Those sons of “jiver”!!

With some recent editings.

Let's have some fun.

We cannot talk about this subject without telling this anekdot.
There are several stories told about that our native absent minded professor Hovannes Toumanian. He was a teacher and it seems at times he was also absent minded. Now we know where his mind was.
One morning he wakes up to the clang clang of pots and pans, his wife was already in the yard stirring a steaming pot over a hot fire. Upon asking her what she was doing she said; "Khash em patrastum".
That evening Hovannes invited all his colleagues and every friend he came across on his way home. They sat around the apseh waiting. After a while Hovannes running out of patience calls his wife and asks her where the khash was. She tells him to go in the yard and look at the clothesline.

Note: khash also means laundry. Both based on "khashel/kharshel", to boil.

Look who else calls it khash; http://www.azerizaur.com/food/
I have corrupted the above URL so as to not advertise their site, but it is obvious where it is from.
Here is what it says;

Kelle-***** (Khash)
214 gr mutton head, 179 gr sheep legs, 47 gr paunch, 5 gr garlic, 10 gr vinegar, salt.
Treat, wash and boil heads, legs and paunch. Skim off scum. Cook meat and bones for 6 - 7 hours, then take out, separate latge bones, cut meat into 40 - 50 gr pieces and cook in the broth again. Serve separately vinegar with pounded garlic to taste.

Below we will see that the author uses "*****" as a synonym to khash.
I had known this for quite sometime, however the complete description is "kelle *****" as seen at that site above. We also tried to avoid it like the plague as it is attributed to Turkish. It seem this is far from the truth. I also knew that the Persians called the stew "kelle pacheh". I thought they may have borrowed it from the Turkish. Surprise! Surprise! My Persian dictionary defines "kelle" as head/skull and "pacheh" as trotters, to mean hoof, totik. Both seem to be native as the dictionary does not attribute to Arabic or any other languages as some other words are indicated so.
So! Who is the original creator of that much loved and hated food? It is conclusive. Turks don't even contend.

We have been too serious. Let's relax and have some fun.

Below is the recipe for khash and the site lists many other recipes. (Thanks to Raffi K. of cilicia.com)
Some one hundred or so years ago Garegin Abp Srvantztiants in his book Hamov Hotov suggested that we use Armenian words for our food. I don't remember much of it except that he had suggsted "tertush" for paklava and "sarnush" for icecream.
We have been talking about composing(or not) Armenian words for every gadget and gizmo. Let's see if we can find/compose Armenian words for the dishes listed. They can be descriptive, translations or even silly inventions.
Oh! The winner will get a year's supply of khash personally delivered by Movses.

I will begin.
Even if we have a native word for khash, in the tradition of "erkayna-klora-blah-blah-blah", I suggest that we use "limona-SKHTORA-glokha-totik" (Note that skhtor is in big letters.)

http://www.cilicia.c...ok_recipes.html

KHASH OR *****
(Hoof, Stomach, Tongue Soup)

4 Calves' Hoofs
6 lamb tongues
2 lbs. Calves' Tripe
2 garlic cloves
salt, pepper, paprika

It is best to buy the feet already cleaned if possible. Otherwise soak feet in boiling water to loosen the shoe, then take off the shoe from each foot. Singe all hairs and scrape off the rest with the edge of a knife. Wash everything very thoroughly. Soak the feet and stomach in water over-night. Each ingredient has to be cooked separately at first.

In a big kettle start cooking the feet with the garlic.

Cut stomach into one inch squares, cook 10 minutes, drain the water. Add fresh water and cook 15 minutes more. Then add to the feet and cook together for 2 hours. When meat separates from foot bones, remove all bones. Also take off scums when formed.

Cook tongues in water until skins can be pulled off easily. Cut up into small pieces. When the feet and stomach is half cooked add the pieces of tongue, and the salt and pepper.

When khash is cooked take off some of its fat into a small frying pan add the paprika and cook a few seconds until paprika is melted, then pour back into the khash. Serve the meat with its own broth in soup plates. Add lemon juice or vinegar when eating. This is a meat course.

Serves 6

"Hayastan" barits pokvetsin @nkan,"Russa"n ou "Tajka"n...

PS. My "beef" of the day. Call it "tavar" if you wiil smile.gif
I was about to suggest to the ads and mods to install a pop-up feature, as everytime a word such as khash, xash is used it would show that the subject has been discussed before, but I decided otherwise, as every time "turkish", jewish" or "genocide" is used we will be flooded with references that even that f**** idiot Noah will not know how to fillter. So. Forget the pop-ups, however, an advice to our new members; Please search before you ask your questions, and initiating an new topic before we know if it has already been discussed. This will reduce the number of repetitions and a waste of out precious time.

So!
Where do we go from here?
Forward, of course.
We started with khash and we showed, without a shadow of a doubt that it is purely Armenian, in both linguistic and culinary sense. Once again “khash” literally means to boil , actually the native Armenian root word is “kharsh” (note the additional R), as “aghekharsh/աղեխարշ” gut wrenching (intestine scalding).
I’m afraid the party kind of ends here, you may not like what follows.
I hate to rain on your parade, put a fly in your soup and pour cold water in your stew , All in all the English equivalent to khash would be “stew“, as we will see.
Now, to the ugly part.
Where do we go from here?
We go forward.
We add another syllable to khash and we get khash-la, We add yet another suffix and we get khash-la-ma. Khashlama.
Sound familiar? It is once again a stew, this time some vegetables, like potatoes are added to the meat and boiled. Even though both khash and khashlama are Armenian dishes and Armenian words, the addition of those two suffixes -la and -ma corrupts the word, bastardizes it and turkifies it. I don’t know that much Turkish, and I don’t know any Turkish grammar, but this much I have noticed that an addition of -la to a noun renders it into a verb, example like “duz” means salt and duzla is the imperative tense of the word to mean “do salt”. And adding -ma to a verb makes it a noun as in “dol” (fill) to dolma (filled). Let us stop here as this is not a “learn Turkish “ site.
Therefore, those SSOs once again have taken a purely native Armenian word, they have bastardized it and now we use it in the Turkish format.
As I said above, I had known this but I was surprised to learn that my miniscule turk-eng dictionary had the word listed, of course in its Europeanized. I.e. without the “kh” sound, as “haslama” it defines it as “boiled meat” . Besides a simple google search using “haslama” will open numerous sites talking about the food.
Is Khashlama Armenian?
Of course!
But the sacred Arnenian word “khash” has been turkified by the addition of those two suffixes.
In other words khashlama/ԽԱՇԼԱՄԱ is nothing but khash /ԽԱՇ itself in its bastardized form.

How do we get over this dilemma?
Let us stop using the word խաշլամա and instead use such as խաշած

Hey Sip!
Remeber your anthem; Hey jan khashlama, Hamov hotov khashlama?
oops.gif That is
Soon you can eat your ghapama instead of pumpkin pie.

I like it! thumbsup.gif
At least it does not use that damn turkifying -la and -ma.
I cannot find any isting of it escept in Soukiasian homanishner it says;
Շոգեխաշ = շոգեհար.
It is referring to being scalded/burned/struck by steam.

OK! Ladies and Gentlemen. Start your spoons.
It is KHASH time again.
I don’t know what the weather in LA is, but here in the North East it is very “khashi”.
Actually, I re-address the invitation and excuse the ladies, as you will see why. smile.gif tongue.gif
I will air both the English and the Armenian versions so we can see and compare some of the terms used.
Who is the best khash chef among us? Maral? Edward? Forget Sip tongue.gif biggrin.gif . He uses Mongolian yak feet. MosJan will be on call for Herisa Fest. apricot.gif apricot.gif
Dear MosJan, please edit this post and replace the articles with actual graphics.

Winter ritual: The khash season is at its height in Armenia
By By Ani Hakobyan
ArmeniaNow Gyumri reporter
When cold days come many people in Armenia, mostly men, would say: “It is time for khash.”
Together with their families, friends, relatives and colleagues Armenians arrange visits to taverns and restaurants where they eat khash – a substantial soup of cows’ feet and stomach enjoyed with plenty of garlic, all sorts of pickled vegetables and vodka on top of everything.
Perhaps for foreigners such a masterpiece of Armenian cuisine may seem dubious, but those in the know say it is a true delicacy.
{ai271201.jpg|left}Levon Karapetyan, a chef and khash specialist at one of the taverns in the town of Gyumri, where people are known to be khash lovers, says the culture of tasty and special meals in Armenia comes from ancient times, but khash has preserved its traditional cooking formula through centuries.
“I like cooking tasty food and using my imagination to create new dishes,” the 45-year-old chef says. “But in Armenian national cuisine there are few special meals that are very sensitive and should not be cooked differently and khash is one of them,” explains Karapetyan, cutting into pieces feet of cows for the next day.
To prepare khash a cow’s feet are stripped of hair and scraped off until they turn opaque. Then, the cow’s feet are boiled all night until the ingredients give its juice to water and the flesh flakes off the bones.
Traditionally khash is served in the morning between 7-10 a.m. Centuries ago, when rich people slaughtered animals, they used only meat and threw away the feet (as well as tails and entrails) and it is believed that poor people picked them up, cooked and ate them early in the morning so that nobody could see what they were eating.
But it is enough to have khash only once to realize that it is better to eat khash in the morning anyway, because it is difficult to digest. Some people abstain from eating from the previous evening.
Khash is no longer considered to be a meal for the poor, especially now that a portion of khash is available for a minimum of 1,500 drams (or about $5) in Gyumri’s taverns. In some restaurants in Yerevan khash is served for up to 5,000 drams (about $16) a portion.
Unlike other kinds of Armenian meals khash is served only with limited ingredients, such as garlic, salt, mineral water, greens, radishes, yellow chili peppers, lavash, and vodka, which makes it possible to digest the “feet soup”.
Eating khash requires some sophisticated skills. After adding salt and garlic the meat of feet should be removed from the soup plate, put on another plate and covered with soft lavash. Then dried lavash is crumbed into the broth until it becomes like a sponge. True khash eaters – as they call themselves – eat it with their hands, using lavash for the spoon.
Avetik Melik-Sargsyan, head of the Shirak Regional Service for the Protection of Historical and Cultural Environment, says that despite the fact that Armenians like making lots of toasts during a party, only three toasts are traditionally proposed during the “khash ceremony”, preceding a “Bari Luis (good morning) opening toast-greeting.
“The first toast is for the people who left important things early in the morning and joined for the khash eating,” the khash lover explains. “The second is for the one who cooked the khash and stayed awake for the whole night, and the third is for the khash that has gathered people around the table.”
Many people, especially women who go for khash would confess that they enjoy the feast atmosphere, the lively talks and jokes during the meal, rather than the khash itself.

QUOTE (Arpa @ Nov 21 2005, 03:25 PM)

Well, "patcha" does mean "sleeve," you know. http://seslisozluk.c...k_search=Search

BTW, a good piece of reading for the gastrointestinal nationalists:

http://attilapelit.b...ationalism.html

Gastrointestinal nationalism
Do you ever wonder about the national origins of the delicious food you eat while you’re here, who invented it first, and where? Neither do I, and here’s why…

There are few things more pathetic to witness than grown and educated men debating the nationality of food. Turks, Greeks, Arabs, Israelis, Bulgarians, etc., will all argue heatedly over the nationality of things like cheese, coffee, pastry desserts and kebabs, as if their whole existence depended on it. “Coffee is Greek,” will say Spiro, and Memo will counter “No, it’s Turkish!” Seriously, I’ve heard this being said. They were arguing so ferociously over the national honor of their warm beverage that they forgot to drink it. So it went cold, and when they did have a lull and took a sip of their cold, hardened, [insert-whatever-nationality-you-believe-it-to-be-here] coffee, they both nearly spat it out and put it down with bitter expressions on their faces. You know nationalism has gone too far when you can’t even enjoy your coffee without having to listen to a pseudo-historical lecture on its glorious racial roots.

We all know nationalism is stupid enough as it is without bringing food and drinks into the equation. Go out in public and you’ll find that 95 percent of the people you share a national identity with will annoy the living shit out of you – especially if they happen to be in close proximity. In fact, just looking around, you’ll find that everyone is annoyed with everyone all the time. Walk into a restaurant and it’s guaranteed that half the people in there are talking dirt about people at other tables. Get in a queue and everyone starts sighing and complaining and puffing their cheeks and looking around like they would rather be anywhere else than stuck with each other. Get on a bus and everyone treats each other like they’re lepers. But tell us baklava is Greek, and we’ll suddenly become proud nationalists, thumping tables, pointing fingers, and using phrases like “When our ancestors first came to Anatolia…” or “[so-and-so] is a Turkish word!” Tell me the best feta cheese is from Bulgaria and me and my nation of 70 million Turks will stand united to defy you to the end – even though we’d rather not have to stand in the same bus stop together.

Of course, food and drink nationalism isn’t just a Turkish trait, but nowhere in the world is it as ridiculous as in the Balkans and the Middle East where insecurities and complexes about national identity are more extreme than anywhere else in the world. Recently, Turkish baklava-makers countered Greek Cypriot allegations that baklava is Greek, and it was all over the news, with even state ministers joining in the debate. Similar disputes have been going on for decades over other things too, like Turkish Delight, yoghurt, meatballs, stuffed vine-leaves, in fact pretty much every single item of food in Turkish and Greek cuisine, because they pretty much share the same cuisine. You know how when Pakistanis and Indians fight over whose-cuisine-has-what and you eat it as a foreigner and go “I don’t get it, what’s the difference?”… Well, that’s the same with Greek and Turkish cuisine. It’s the same thing. That’s why they fight over everything when they should be happy instead that they share an excellent common Byzantine-Ottoman heritage.

Honestly, you could understand people getting all proud about past empires, conquerors, great wars of liberation, wonderful feats… but the nationality of food? I could be proud of Pericles or Suleiman the Magnificent being my supposed ancestor or something, but stuffed cabbage leaves in olive oil? Gee, let’s run that up a flagpole and see how it flies. You don’t see Americans and Germans at each others’ throats over hamburgers, or Mexicans and Guatemalans trying to cut each others’ heads off with flying tortillas, but say “Turkish Coffee” to a Greek waiter and he’ll spit and walk away as if you just told him his mother is a donkey. Say “Greek Baklava” to a Turkish pastry chef and he’ll fume and rage and swear to make the ultimate Uber-Baklava.

It’s time for Turks and Greeks – and other peoples – to accept that if people other than themselves share the same traditional dish then it’s also their dish as much as it is yours, regardless of obscure and impossible to verify “national” origins. Thus there is Greek Coffee in Greece and Turkish Coffee in Turkey, thus tzatziki and cacık are both Greek and Turkish, thus baklava is both Greek and Turkish (and Syrian, etc…), thus keftedes and köfte are both Greek and Turkish (and whoever else has it), thus börek is Greek and Turkish and Armenian and Serbian and so on. All these nations should be able to proudly claim each one of these dishes as their own respective national dish without being threatened with reprisal attacks from skinhead chefs wielding fascist kitchen appliances. To seek national and racial origins in food is just as ridiculous as looking for them in people. Like people, food evolves, mixes, changes over time, representing layer upon layer of history, interaction and cross-cultural influences. Thus, looking for origins is futile, and ramming your nationalist insecurities down other peoples’ throats with your food chauvinism is even more so. You are what you eat, as they say, but you don’t have to force what you are on what other people eat.

But if you really, really insist on the national origins of food, then this is as close as you’ll get to the truth: feta cheese comes from Goat’s-teet-istan, coffee comes from Ground-beans-in-hot-water-ovo, and kebabs come from Butchered-and-skinned-animal-ia. That’s all you need to know. Now could everybody shut up and enjoy their meal please?

Well, "patcha" does mean "sleeve," you know. http://seslisozluk.c...k_search=Search

BTW, a good piece of reading for the gastrointestinal nationalists:

Do you ever wonder about the national origins of the delicious food you eat while you’re here, who invented it first, and where? Neither do I, and here’s why…
....

Can I say that the above is full of "wind", like in "stormig/little wind"?
When did "pactcha" end up meaning "sleeve"? It is none other than the furkified form of Armenian "poch/tail/rump/thigh/zist".
As to the greekifying of all those terms. Yes, we know that adding the "tes/es" suffix makes everything Greek like "Koetfa/kafta/koeftates", "Dolma/domates", "potato/patates", "tomato/tomates/tamates." And how about adding "es" to Tigran to make him sound like Greek Tigran-es? Add "es" to Trdat and make it "Triditat-es"? Not to mention adding "es" to Johann/Youhana" and make it Johannes/Youhann-es/Յովան/Յովաննէս? Yervand/Երւանդունի/Orondit to "orontes"?
Please search and find why "lolik", a native American fruit was named- (Iitalian)- "pomi-doro"-(golden apple)- (Arabic, banadora) on one hand, and (Spanish)-"tamate" on the other.

Gastrointestinal nationalism
Do you ever wonder about the national origins of the delicious food you eat while you're here, who invented it first, and where? Neither do I, and here's why…

"Coffee is Greek," will say Spiro, and Memo will counter "No, it's Turkish!" Seriously, I've heard this being said. You know nationalism has gone too far when you can't even enjoy your coffee without having to listen to a pseudo-historical lecture on its glorious racial roots.

Of course, food and drink nationalism isn't just a Turkish trait, but nowhere in the world is it as ridiculous as in the Balkans and the Middle East where insecurities and complexes about national identity are more extreme than anywhere else in the world. You know how when Pakistanis and Indians fight over whose-cuisine-has-what and you eat it as a foreigner and go "I don't get it, what's the difference?"… Well, that's the same with Greek and Turkish cuisine. It's the same thing. That's why they fight over everything when they should be happy instead that they share an excellent common Byzantine-Ottoman heritage.

Gee, let's run that up a flagpole and see how it flies. You don't see Americans and Germans at each others' throats over hamburgers, or Mexicans and Guatemalans trying to cut each others' heads off with flying tortillas, but say "Turkish Coffee" to a Greek waiter and he'll spit and walk away as if you just told him his mother is a donkey. Say "Greek Baklava" to a Turkish pastry chef and he'll fume and rage and swear to make the ultimate Uber-Baklava.

It's time for Turks and Greeks – and other peoples – to accept that if people other than themselves share the same traditional dish then it's also their dish as much as it is yours, regardless of obscure and impossible to verify "national" origins. Thus, looking for origins is futile, and ramming your nationalist insecurities down other peoples' throats with your food chauvinism is even more so. You are what you eat, as they say, but you don't have to force what you are on what other people eat.

But if you really, really insist on the national origins of food, then this is as close as you'll get to the truth: feta cheese comes from Goat's-teet-istan, coffee comes from Ground-beans-in-hot-water-ovo, and kebabs come from Butchered-and-skinned-animal-ia. That's all you need to know. Now could everybody shut up and enjoy their meal please?

This may be off topic; but I must say Stormig, there is a lot of truth in some of the things you said and it made me laugh a good deal. biggrin.gif I found it very funny about the grown educated men arguing then drinking cold bitter coffee and pretty much spitting it out. tongue.gif

Except a good deal of the time with one or two associates of mine who acted like scrooges a good deal of the time, once in a while I shocked them and has given them the real "sweet" treatment, and to my amazement and success I MADE THEM turn around to be sweet to me back!!! smile.gif I call it then my success of the psychological treatment to them!!!!! smile.gif It made me feel like Poleana's the "glad" game girl. smile.gif

Some of the people that you've mentioned above should try it at least some of the time and voila they'll be surprised!!!! smile.gif

Look at these idiots who have placed Ajarian on the internet and chose only to attach it to the Hebrew/Եփրայերէն ignoring, the fact that Ajarian invokes the Pahlavi “sumbak” and the Arabic “sumbaq”, and that it goes back to “k’apho” from which the English “hoof” is derived. Why don’t our internet linguists tell us the whole truth and stop where our language is connected to “hebrew”? To that I say a big “PHUEY”. When did Armenians have an intimate contact with the Hebrews? Yeah, yeah.

Quotes from Arpas' Հերիսայ thread

QUOTE
As to the origin of word “herisa/harisa“, just as I suspected Ajarian claims it to have reached us via some semitic languages like Assyrian, Arabic etc. arsa,, arsi etc. where, once again it means hulled barley, կճեպը հանուած գարի

QUOTE
BTW. Ajarian also says that in some Armenian dialects beer is known as kaskajur/
