Is there such a thing, has anyone done a research on the subject?
As we can see I had posted the following some time ago under another subject topic- Khohket, point to ponder.
However, it seems when it comes to the culture of Armenian cuisine we hear a deafening silence.
I won’t even open a so called Armenian cookbook, just so my nerves won’t frazzle. I have yet to see one of those books give us the native Armenian names of the dishes. It is disgusting! No, not the food, the names.
What did we eat, besides dirt maybe, before we met the Arabs and the Turks. Remember we existed, and lived on those lands at least 3000 years before we even heard of the Turk. So! What did we eat all those 3000 years?
There must be some kind of record as to what Armenians ate before 1000 AD. Or is there? Has anyone seen classical writings where our cuisine is discussed?
What did we call them? Maybe someone with access to the Matenadaran would make a project to see what we ate and what we called them for all those years.
No, no we did not call them dolma, sarma, patljan kebab, neither did we call them tabouleh(Arabic) and the like, nor did we it “imam bayildi“, the most disgusting name attributed to an Armenian dish, not only it is in the Turkish language it also refers to an Islamic cleric.
When is the last time Armenians had an Imam as a clergy?
We learned those words after we met the Arabs and the Turks.
So!
What did we eat?
Or as the devoutly religious people that we are, were we in perpetual starvation diet, tsom/lent for all those qarsun hazar tariner??
PS.Let me remind us that some time ago I wrote that “baklava” is a native Armenian word, a variation of “bak/pak lavash”, i.e. lent (thin)bread, otherwise it makes no sense neither in Greek nor in Arabic.
But as expected it is a very elusive subject, specially for us Armenians as I have not located any reliable and expanded source.
What have the Armenians prepared and eaten, say, before the year 1000AD?
We have some idea what we have been eating since, and it is not a pretty picture, to say the least. The very meager and elusive sources will contend themselves by phrases like; “Armenians have known and cultivated grains, vegetables and meats of all kinds, prepared them and eaten them”.
The only reliably historical record is attributed to Xenophon, where one can see that we had known wheat and barley, in the least. How we used them??

A war is brewing, and it is not in the beer brewing vats, it is in the kitchen, khohanots. Let us see who will find the “kitchen too hot“!!.
Wehave our work cut out for us. Before those savages wake up and discover that we have been advertising our cuisine using their “names and words”, we better get going and clean all those internet sites of Turkish/Azeri words like “dolma, sarma and kaklama”. Let us rename them in our own language before they use our own weapons against us.
This has always been a cause of nightmare for me.
What if those savages suddenly wake up and discover that 90% of our cuisine has Turkish names and 75% of us have Turkish surnames.
You think it won’t happen??

Եվրոպական մշակութային կոնվենցիայի 50-ամյակի կապակցությամբ Եվրոխորհրդի նախաձեռնությամբ լույս է տեսել «Եվրոպայի խոհարարական մշակույթը» գիրքը, որում ընդգրկված են 40 երկրների ազգային խոհանոցների մասին պատմող նյութեր ու բաղադրատոմսեր: Եվրոպական երկրների խոհանոցների կողքին հակիրճ ներկայացված են նաեւ Հայաստանի, Վրաստանի եւ Ադրբեջանի խոհանոցները: Գիտությունների ազգային ակադեմիայի ազգագրության ինստիտուտի գիտաշխատող Սվետլանա Պողոսյանը հայկական խոհանոցի պատմությունը սկսում է տարեհացով, ընդգծելով հին ժամանակներից ի վեր հացամթերքի յուրահատուկ տեղը հայերի սննդակարգում: Որպես ամանորյա եւ տոնական ուտեստներ առանձին լուսանկարներով ներկայացված են թփով տոլման, հարիսան, կճուճը, իշխանով փլավը: Մսով կերակրատեսակների ցանկում չեն մոռացվել նաեւ խաշլաման ու խաշը, իսկ քաղցրեղենից առանձնացվել են ալանին ու գաթան:

Ամենազավեշտալին դեռ առջեւում է, քանի որ Ամիրասլանովը հայտնաբերել է, որ Կովկասի շուկաները լի են եղել Ադրբեջանի սննդամթերքով՝ հատկապես Բորչալուի պանրով, իսկ Գյոքչե գյոլի, այսինքն՝ Սեւանա լճի իշխանը մեծ պահանջարկ է ունեցել Թիֆլիսի շուկաներում: Հայտնի ուտեստներից հիշատակվում են տոլման, ղաուրման, բոզարտման, դոնդուրման, լյուլյա քյաբաբը, սեբզե քուքուն եւ այլն: «Բնիկ ադրբեջանական» ծագում ունեն Գյանջայի փախլավան, Ղարաբաղի բաստուրման եւ Շեքի հալվան: Ի դեպ, հենց Շեքիում էլ հայտնաբերվել է, իբր, աշխարհի ամենահին, 3700 տարվա ինքնաեռը:
«Ադրբեջանի խոհանոցային մշակույթը թույլ է տալիս ուտել ձեռքով: Մեր բարակ հացը (յուքա, սանգահ, լավաշ) գործածվում է որպես գդալ ուտելիքի հեղուկ մասի համար: Ուտեստի պատշաճ մասը ծածկվում է հացով: Ձեռքով ուտելը մեծ առավելություններ ունի: Յուրաքանչյուր մատ ունի զգայուն նյարդային վերջույթ: Ձեռքերը զգում ու հաշվի են առնում ամեն մի ուտեստի տաքությունն ու բաղադրությունը: Երբ կերակուրը մոտեցնում ենք բերանին գդալով կամ պատառաքաղով, կարող ենք այրել կամ սառեցնել մեր բերանը: Բացի այդ մետաղյա գդալներն ու պատառաքաղները փչացնում են մեր ատամները», եզրահանգում է խոհանոցագետը, հավելելով, որ ավանդույթի համաձայն ուտելուց հետո ձեռքերը պետք է տեղը տեղին լվանալ, որից հետո մտցնել վարդաջրով լի խոր ամանի մեջ:
Ի տարբերություն ադրբեջանցիների, մեր հարեւան վրացիները շատ համեստ են ներկայացրել շատերին հայտնի իրենց իսկապես համեղ խոհանոցը, ներկայացնելով միայն խինկալին եւ մեղրուլի խաչապուրին, ավելի մեծ տեղ տալով վրացական սովորությունների, մասնավորապես սեղանապետի՝ թամադայի դերին:
Չմոռանանք ասել, որ ադրբեջանական ուտեստներից ոչ մեկի բաղադրատոմսը տրված չէ, իսկ հայկականից նշված են տոլմայի, հարիսայի, իշխանով փլավի, ալանու բաղադրատոմսերը:
